Pocket Full Of Sunshine

Banoffee Pie

I’ve never really written a recipe for anything before but I originally learnt this recipe from someone who makes the nicest banoffee pie in the world!

You will need-
. 3 to 4 bananas
. 2 packs of KDD kwik whip
. 1 packet of digestives
. 5 cans of nestle condensed milk or one jar of smuckers caramel
. 1 flake chocolate bar
. 2 sticks of butter

First off all make sure the butter is out of the fridge a good couple of hours before you start so that it’ll be soft.
Empty the cans of nestle condensed milk in to a pan and put that on the stove, you should bake it for around 3 hours.
Empty the pack of digestive biscuits in a large mixing bowl and crush them with your hands (wash your hands obviously!) make sure you get all the pieces even the little ones so that there won’t be any lumpy bits in it!
Add the butter in small cubes and mix it until you can’t see the butter, make sure to add the butter bit by bit until you see how much is appropriate so that it won’t be too soft or too little.
Get a plate and put the biscuit mix you made inside it and proceed to spread it evenly making sure it doesn’t fall apart. If it does then you need to add more butter.

Put the plate in the fridge until the toffee is ready. You will know when it is ready because it will turn brown. Take the plate out of the fridge and pour the toffee over the biscuit mix.
Get a chopping board and slice the bananas thinly. Place the bananas evenly over the caramel making as many layers as you like (use more bananas if neccessary)
Get another mixing bowl and empty both packets of kwik whip and whip until it turns into cream.
Spread the cream evenly over the bananas making sure to cover them. Put it in the fridge for a good couple of hours to set. When you take it out you can crumble the flake to use on top or you could use a couple of slices of banana in the middle or biscuit crumble and chocolate syrup.

Tips: To know if your whipped cream is ready try tipping the bowl upside down if you see it slipping then it needs to be whipped more, if you can hold it upside down without it moving then it’s ready (make sure not to over whip because it will taste, well, over whipped)

You could use a little crushed walnut in the base to give it more flavor, cinnamon powder or drizzle chocolate syrup ontop of the bananas. Whatever floats your boat.

Happy Baking!!

you only need one can of the milk, and you keep it in the tin and boil it for 3 hours, keep topping the water up and then after put the tin in cold water, open it and mix it in a bowl to make it soft πŸ˜‰
